Walnut muffins
Ingredients (makes 12)
- 250 gr (wholewheat) flour
- 2 tea spoons baking powder
- pinch of salt
- 200g caster sugar
- 75 gr walnuts roughly choppped
- 1 tea spoon vanilla essence
- 100g butter, melted and cooled
- 3 eggs
- 200ml milk
How to
- Preaheat the oven to 180°C and line a 12-muffin tin with paper cups.
- In a bowl, mix the dry ingredients: flour, baking powder, salt and caster sugar.
- In another bowl mix the vanilla essence, butter, eggs and milk (until smooth).
- Pour the liquid mixture over the dry ingredients and mix well.
- Divide the batter between the 12 muffin paper cases.
- Bake for 20/25 minutes (or until a skewer inserted in the centre of a muffin comes out clean.)
- Allow to cool in the tin and unmould.
